Taste is Subjective

Taste is inherently subjective. Period.

This has been discussed by the boys and girls down at portafilter.net for a bit and by wine, coffee, tea, beer enthusiasts worldwide. Some people believe that taste can be boiled down to a combination of several organic chemicals, your esters, ketones and such. I know it's possible. But, taste is the brain's perception of these chemicals, not the chemicals themselves. There are benchmarks for everyone, for sure, but with the 700+ chemicals contributing to coffee's flavor there will be differences in perceived "taste". So the score sheets and flavor wheels are essentially trying to objectify taste. Throw them out the window (or use them as a guide to try and figure out how that Tegu is tantalizing your palate!).
